Squab & Waffles, or as we call them ‘Squaffles’ is a fun twist on the classic chicken & waffles recipe! Don’t forget the splash of pure maple syrup when serving.

Ingredients

Squab:

  • 6 King Cal squabs split
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1 cup all-purpose flour
  • 4 cups shortening

Waffles:

  • 2 eggs
  • 2 cups all-purpose flour
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil
  • 1 tablespoon white sugar
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
 

Maple Syrup & butter to serve

How to Make Squab & Waffles

Squab:

Step 1
Sprinkle squabs with salt and pepper; dredge in flour.

Step 2
Heat shortening to 325°; add squabs, and fry 15 minutes or until golden brown and crisp, turning frequently. Drain well on paper towels before serving.

Waffles:

Step 3
Preheat waffle iron. With an electric mixer, beat eggs in large bowl until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, until smooth. Careful to not overmix.

Step 4
Spray preheated waffle iron with non-stick cooking spray. Pour mix into hot waffle iron. Cook until golden brown. Serve hot with Fried Squab and a drizzle of maple syrup.
